Carrabba's® Chicken Marsala


Ingredients

  • 1 (8 ounce) boneless, skinless chicken breast, pounded thin
  • 1/4 cup sliced button mushrooms
  • 2 teaspoons yellow onion, finely chopped
  • 1/2 cup dry Marsala wine
  • 1 thin slice prosciutto ham, cut into 1/4-inch strips
  • 1/2 stick unsalted butter
  • Flour
  • Salt
  • Black pepper
  • 1/4 cup Italian parsley, finely chopped

Directions

  1. Lightly season chicken with salt and black pepper. Heat oil or clarified butter over medium high heat in a saute pan. Once the oil is hot, lightly dredge the chicken in flour and add to saute pan.
  2. Cook chicken for 2-3 minutes until browned and then flip over. Cook about 1 minute more, add the mushrooms and cook for another minute. When chicken is almost finished, add the Marsala wine, prosciutto, onion, a pinch of salt and black pepper, and allow the wine to reduce by 85%. When most of the wine has been evaporated, remove pan from heat and toss the chicken and mushrooms well. Allow the pan to cool for a minute. The wine should be almost all evaporated and reduced to a thick syrup.
  3. Cut the butter into small cubes (about 6). Return the pan to low heat and, using a wire whip, fold the butter into the reduced wine one cube at a time. Stir constantly as you add the butter. Do not allow the sauce to get too hot or it will separate. Once all the butter is folded in, add chopped parsley and toss.
  4. Place the sauteed chicken on the plate and spoon the remaining sauce over the chicken. Serve with your favorite side of pasta or vegetable.

Hubby and Kids tried something a bit different today

One of hubby's co-workers at work invited him to come out today and go shore fishing. Hubby says cool. The kids decided to go with him. The plan was to hopefully catch some tiny sharks and some small stingrays. (at the end, they would release them back in the water). Well needless to say after 4 hours, hubby and kids did not catch a thing. However, several of the other guys caught some and they allowed the kids to hold the little sharks. It is a shame that hubby did not take a camera, would have been cool to share some pictures. In the mean time, I stayed at home, cause I had some massive homework to catch up on.

Charley's Slow Cooker Mexican Style Meat




Ingredients

  • 1 (4 pound) chuck roast
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 1 1/4 cups diced green chile pepper
  • 1 teaspoon chili powder
  • 1 teaspoon ground cayenne pepper
  • 1 (5 ounce) bottle hot pepper sauce
  • 1 teaspoon garlic powder

Directions

  1. Trim the roast of any excess fat, and season with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Place meat in hot skillet, and brown meat quickly on all sides.
  2. Transfer the roast to a slow cooker, and sprinkle onion over meat. Season with chile peppers, chili powder, cayenne pepper, hot pepper sauce, and garlic powder. Add enough water to cover 1/3 of the roast.
  3. Cover, and cook on High for 6 hours, checking to make sure there is always at least a small amount of liquid in the bottom. Reduce heat to Low, and continue cooking for 2 to 4 hours, or until meat is totally tender and falls apart.

Thought that I would never love rain so much

I really never thought I would say this, but I am actually happy that it is raining today. The last couple of days have been extremely uncomfortable. It got over 100 at some times. But what really hurt was the humidity. We decided to go to Ocean City Maryland on Saturday. Lets just say sometimes getting in the water did not help. I am really thankful that we didn't have any black outs where we live at. That would have been horrible. I recall when my husband and I were stationed at McGuire AFB, in New Jersey, we had a blackout on base housing that lasted a whole week. This occurred during the heatwave there. It was so hot that the only possible way you could stay somewhat cool was to lay down and not move. Thankfully, with me used to work for the Services Squadron on base, I was able to get a hookup on a room at lodging.

Ways to save at the gas pump



1. One of the best ways to save on gas is to get rid of all your gas guzzlers. They may be great when you take trips with family, but they are a pain in the butt for your wallet.

2. Start walking or riding your bike. Instead of hopping into your car to go somewhere in walking distance. If you live near some form of public transportation, take that.

3. Drive more efficiently. This means drive the speed limit. This will help get you the most miles per gallon. Also after stopping at a light, don't haul butt real fast when the light turns green. Start out slowly and get your speed up.

4. Don't use the cheap stuff. When it comes to keeping your vehicle maintained, use quality oil and change the oil filter regularly. When it comes to your vehicles maintenance schedule, it is important to follow it.

5. Inflate your tires right. Under or over inflated tires can lower your gas mileage by an average of 4%. This is according to Fueleconomy.gov

My Country Style Steak




Ingredients

  • 2 tablespoons vegetable oil
  • 1 pound cube steak, cut into bite size pieces
  • 1/2 cup all-purpose flour for coating
  • 1 tablespoon all-purpose flour
  • 1 (1 ounce) envelope dry onion soup mix
  • 2 cups water, or as needed
  • salt and pepper to taste
  • garlic salt to taste

Directions

  1. Heat the oil in a large skillet over medium-high heat. Coat cube steak pieces with flour, and shake off the excess. Fry steak pieces in the hot oil just until browned on each side and there are some juices in the pan. Remove with a slotted spoon and set aside.
  2. Stir together the onion soup mix and 1 tablespoon of flour; sprinkle into the skillet. Cook and stir over medium heat until it starts to brown. Gradually mix in the water to make a gravy. Return the cube steak to the pan, and season with salt, pepper, and garlic salt. Cover, and simmer over low heat for about 1 hour.

Ingredients

  • 2 (1 pound) pork tenderloins
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 1 cup barbeque sauce

Directions

  1. Prepare grill for indirect heat.
  2. Season meat with garlic powder, salt, and pepper.
  3. Lightly oil grate. Place tenderloin on grate, and position drip pan under meat. Cook over indirect heat for 30 minutes.
  4. Brush tenderloin with barbeque sauce. Continue cooking for 15 minutes, or to desired doneness. Slice pork, and serve.

Red, White, and Blueberry Cheesecake Pie




Ingredients

  • 8 sheets phyllo dough
  • 1/4 cup butter, melted
  • 2 (8 ounce) packages cream cheese
  • 1/2 cup white sugar
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 2 cups fresh blueberries
  • 1/2 cup strawberry jelly

Directions

  1. On a flat surface, place one sheet phyllo dough. Brush it with melted butter or margarine, and cover with another piece of phyllo. Repeat until all 8 sheets are used. Using kitchen scissors, cut layered phyllo into a 12 to 13 inch circle. Carefully press circle into a greased 9 inch pie plate; gently fan edges. Bake at 425 degrees F (220 degrees C) until edges are just golden, 6 to 8 minutes; cool slightly on a wire rack.
  2. In a medium bowl, beat cream cheese, sugar, and vanilla with an electric mixer until light and fluffy. Beat in eggs until well combined. Fold in 1 cup of blueberries. Pour filling into prepared crust.
  3. Bake at 350 degrees F (175 degrees C) until set, 40 to 50 minutes. To prevent over browning of crust, gently cover pie with foil for the last 25 minutes of baking. Cool completely on a wire rack.
  4. In a small bowl, beat jelly until smooth; spread over cheese filling. Arrange 1 cup blueberries on top in a star pattern.

Spinach and Artichoke Dip


Spinach and Artichoke Dip



Ingredients

  • 1 (14 ounce) can artichoke hearts, drained and chopped
  • 1 (10 ounce) package frozen chopped spinach, thawed and drained
  • 1 cup mayonnaise
  • 1 cup grated Parmesan cheese
  • 2 1/2 cups shredded Monterey Jack cheese

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 1 quart baking dish.
  2. In a medium bowl, mix together artichoke hearts, spinach, mayonnaise, Parmesan cheese and 2 cups Monterey Jack cheese. Transfer mixture to the prepared baking dish, and sprinkle with remaining 1/2 cup of Monterey Jack cheese.
  3. Bake in the center of the preheated oven until the cheese is melted, about 15 minutes.
